carb tuning

i was just wondering if anyone in central jersey is good at tuning carbs. i have an edelbrock performer 750 cfm carb ( i know it is too big for a 350 engine), but i jetted it down but now under full throttle at about 4500 rpm in first gear it feels like the gas is cutting out and the carb overall justs needs to be tuned.

Soo if anyone can help me tune this thing i would be very appreciative.

750 is a fine carb for a healthy 350.
personally i am not a big fan of edelbrock/carter carbs. i do believe taht there is a chart availabel on edelbrocks site taht lists the compenents to make your mix richer or leaner for idle/tip in/ and WOT tuning. if not you can always find sites that there are carter enthusiasts, they are normally glad to help.
