Sounds like it could be a fouled out spark plug and raw fuel is dumping out one cylinder and the other ones ignited it. Are any of your injector wires crimped or cut and grounding out? Strange coincidence that you just installed headers and now this problem. If it was bad fuel, it could have fouled out a plug.
