mono is ok, but personally, with 2 subs, you might as well go for a 2 channel. ive seen and built many setups and thats just my opinion. I will admit that with stereos, everyone has their own beliefs and "what they've been told" so i'm not trying to preach to you what i believe, lol.
the 1ch vs. 2ch does matter quite a bit on you're subs... those subs a single Voince coil at 4 Ohms each so bridged, you'd be running 2 Ohms x 1. The bazooka you listed is RMS 150 watts at 2 Ohms, not that bad. However, with a better amp you'll get MUCH better quality and performance. The only brands of amps i will buy are the 3 following... Alpine, kenwood, and soundstream... alpine cheap ones are just that, cheap. my 2 ch alpine was $700. Kenwoods are very cheap and powerful, but lack some sound quality. they do have nice features like temp protection shutdown and such that allow them to take a beating. I ran a 300 watt kenwood at .5 Ohm(NOT recommended at all) and it did fine. (most amps are not stable at even 1 Ohm) And finally, i love soundstream, those will be the next set of amps i buy. They are incredible and last, but once again you pay for the quality. I run soundstream subs and they are amazing. After 6 years of serious abuse, bass cds and all, they still slam. In my case, my stereo is a big part but for you, i dont see the need for top dollar equipment, but at least go for something good.
Kenwood makes a 300watt 2 channel amp w/built in fan for around $120 new @ 6th ave elctronics or best buy. ive installed 2 of those and they are great....

EDIT: also one BIG thing to make sure of, is that whatever headunit you are using, has RCA outputs, almost all do so that shouldnt be a problem, some even have sub outputs which are even better.
EDIT #2: Also another thing i forgot to ask is abotu the box/subs you are using,... seperate boxes or one? sealed? ported?
