Should I be worried about this? or should I go with a 26 or 27'' tire instead?

I like a 750 double pumper . Very easy to tune . It makes a noticeable difference . You have a loose converter and some gear so it shouldnt be a problem .You shouldnt have any problems with "spinning "the motor through the traps as long as your still making power .I put 410's in my 83 firebird with a 1970 LT1 ( I think ) ,275 50 15 w/a 700r and they were too much at the track . I ran out of motor @ 60 feet before the traps

It topped out @ 5800 RPMs with my 268 cam . Your best bet is get to the track and see where your at with your RPMs . Go from there . I think you would be fine with a 26" myself and it would be quicker out of the hole too .
