Need some tunning

Well its a bit late in the season =p but I am trying to figure out an issue with my motor. I floor it and she wants to bog and die, motor gets quiet and then when I let go of the gas she is back to life. Now if I drive around for say an hour then I feel like stomping on it there is a 1-2 second delay and then it flies.

I retarded the timing a little because after I got copper header gaskets put in the idle was weird and erratic. She sounded a lot better and the normal driving was a lot easier. Sadly that is all I had time to do and it was as the snow was falling.

My question is, Do any of you have experience with carb tuning and timing, I am new to this and could use a mentor. If not is there a shop any of you would recommend.
