Do you have flow #'s on your heads? want to see how much they were ported? Wre they just cleaned up and gasket matched?

Changing head gaskets should not have any effects on idle characteristics. Something is odd there. Gather there are different thickness gaskets, but they only vary w/in a few thousandths which will affect CR but not considerably.

I can help you, but not over the net as I would need to see the car and do some test. It would be quicker and more time effective.
Did he change head gaskets or headER gaskets?
