LS7 all the way, stock like driveability, durability, and longevity. It won't glaze on you if you need to slip it in traffic, etc.
Could also get it with the slightly lighter flywheel to give the car a bit more pep, just will require a tad bit more throttle on take off.
I had one in my car that i got used, beat on it for 10k+ miles, and just pulled it out to put the Mantic Twin Disk in, the ls7 is still in great shape is most likely going in a friend's car.
