Under normal circumstances they pick one item, offer it for a (usually) very cheap price, and sell it for 24 hours (beginning at midnight central time). If the item sells out before the day is up, oh well. If the item doesn't sell out, well then they have extras.
Occaisionally (like today) they will have what is known as a Woot-Off, where they put up an item for sale, and as soon as it sells out, they post another one.
It's actually quite addicting, and you can find good deals on some cool stuff.
