Well prepared food in good sized portions will get the most notice in a new restaurant. Price your menu items realistically (good price to quality ratio). Make sure the food is prepared in a consistent manner and served fresh and hot. Train your kitchen and service staff thoroughly. They're your direct links with the public. Good luck.
This is good advice, and is why places like Rutt's Hut, Hot Dog Johnny's, and some other roadside places always seem to do well.
