Burgers, Pork roll (a must), wings, lots of different appetizers like mozz. sticks, chicken fingers, etc.
Milkshakes and ice cream are also a must.

Presuming you've read Guy Fieri's, Diners, Drive-Ins, and Dives. Most of the successful places in that book do things in a unique or personalized way- even if they offer typical diner fare. In an area like Lambertville, you should probably have a menu that appeals to local tastes (locals will be your profit base) as well a secondary menu theme that offers a new twist on the traditional diner standbys. Well prepared food in good sized portions will get the most notice in a new restaurant. Price your menu items realistically (good price to quality ratio). Make sure the food is prepared in a consistent manner and served fresh and hot. Train your kitchen and service staff thoroughly. They're your direct links with the public. Good luck.

This is good advice, and is why places like Rutt's Hut, Hot Dog Johnny's, and some other roadside places always seem to do well.

Are you talking about the building in the flea market area itself? Oh yeah, don't forget the cherry pie!

I am not a fan of the quality of food found at many drive-in/ car places. This is simply b/c good food cost $ and car places are known to have cheap food. In any event, I love a good chilli dog w/ beef hot dog. Leo's in Hackettsown has the best so far and I have had many. A hambuger that taste like a hamburger.

They keep is simple. Rutts hasn't fancied me lately. It seems the dogs have gone down hill. Although, the lingo they use there is classic.

wow most of the good stuff has already been named. but i think one important thing is PRICE. if you want to attract people with cars, a lot of car enthusiasts are younger (well i think at least) young people dont have much money. if you made great food with a great price id be there a lot

word to the wise before opening any new business in this economy, have enough money set aside to pay for a full 9-12 months of bills and operating costs before you even think of opening the doors. Tons of people may say it's a cool idea and that they'll come down, but even frequent customers might come once a week, most once a month or less. If they spend $10 each time think how many people you need to draw in to even break even, forgetting about a profit.
Good luck, but don't jump into a new business, especially in the food industry, blindly. Talk to lawyers, accountants, make up spreadsheets and budget everything out.
Also think about new fire code laws. If this place that you're gettig is an old diner, you may end up paying $20k in fire suppression alone before you can open the doors.
